Sprouted greengram with veggies kurma

A very versatile & healthy dish enriched with protein & fibre.A mild spiced gravy which is loved by one and all.

Ingredients :-

Sprouted Green gram      1 cup

Mixed Vegetables              1 – ½ cup (carrot ,peas,beans,potatoe )

Salt                                        to taste

Turmeric                              ½ tsp

Chilly powder                      ½ - 3/4 tsp ( to taste )

Coriander powder               ½ tsp

Coriander leaves                2 tbsp ( chopped )

To season :-

Mustard                               ½ tsp

Urad dhal                             ½ tsp

Big onion                             1 chopped

Tomato                                 1 chopped

Curry leaves                          a few

Red chilly                               1

Oil                                           1 tsp

To grind to a coarse paste :-

Grated Coconut                  2-3 tbsp

Fennel                                  ½ tsp

Garlic                                     2-3 pearls

Puffed Bengal gram           1tbsp

Method :-

In a cooker or heavy bottomed vessel heat oil .

Add mustard ,urad dhal ,let it splutter.

Add onions ,curry leaves ,red chilly,wait for onions to change colour.

Now add tomatoes ,allow it to get mushy.

Add sprouted dhal ,veggies,powders ,salt and cook approx. 10 min.

Now add the ground paste ,let it cook till raw smell leaves.

Garnish with coriander leaves.


Note :- this gravy tastes good with rice ,chappati,puri,iddli,dosa.
