Soya Sundal

Soya sundal is a very easy to handle dish.Its one of the healthy way out and filling on the stomach.
Its a different option from the regular legumes option.Its unlike the legumes not heavy or gassy on the tummy .

Ingredients :
Soya chunks 1 cup
Carrot 1or 2 ( grated )
Coconut 2-3 tbsp ( grated )
Lime ½ (juice )
Ginger garlic paste ½ -3/4 tsp
Onion 1 ( chopped )
Green chilly 1or 2 ( to taste )
Curry leaves a few
Urad dhal ¼ tsp
Mustard ¼ tsp
Oil ¾ tbsp
Salt to taste
Method :
In boiling water add soya chunks and allow it to cook for 5-7 minutes.
Set aside to cool.
When it cools , squeeze out the water .
In a pan heat oil ,throw in mustard as it splutters.
Add urad dhal ,allow it to splutter.
Add curry leaves , green chilly and onions ,let it change colour.
Throw in ginger garlic paste ,toss it.
Add the soya , salt ,lime juice and give it to a good toss.
Garnish with coriander leaves and grated coconut.
Serve hot .
