Masala Chicken Fried Rice

Blend of spices & the rice makes it a scrumptious dish !!
This rice takes the drivers seat always in a spread.This a south indian style fried rice which is very easy to make & on the stomach too.

Ingredients :-
Chicken 1 kg
Onion 1 ( sliced )
Red chilly 1
Basmati rice 2 cups
Soya sauce 1 tsp
Oil 1-11/2 tbsp
Salt to taste
Eggs 2
Coriander leaves 2 -3 table spoon chopped
Fry in oil &Grind to a paste :-
Oil 1 -11/2tsp
Small onions 10-15 no
Red chilly 8-10 ( to taste )
Fennel ½ tsp
Cinnamon 1’’
Cloves 3-4
Cardamon 2-3
Poppy seeds ½ tsp
Ginger 1’’
Garlic 5-7 pearls
Grated coconut 3-5 tbsp
Method :-
Cook the rice with 1: 2 water,salt & soya sauce for 12- 15 min in a pressure cooker.
Open up the pressure cool it well.
Now in a heavy bottomed vessel heat oil add onions ,fry well.
Add the chicken pieces and give it a toss.
Now add the ground masala paste & fry for 2-3 min.
Add about 1-2 cups of water,salt .
Close it & cook till chicken is tender.
When the chicken is done, open & cook till raw smell leaves.
If preferred set aside some gravy to use it .
Remove the chicken pieces from the gravy & shred it up without bones.
As this is been done ,allow the gravy to boil until it becomes thick as in it should become a thick gravy .
Add the shredded chicken to this gravy & give it a boil.
Now add the cooked cooled rice to this gravy & give a good mix carefully,making sure the rice doesn’t get broken.
Check the taste .
Eggs can be scrambled and garnished along with coriander leaves.
