The left overs can be turned into a mouth watering dish whereby the left overs are used to its fullest without wastage !!

Ingredients :-
Chapatis 10- 12 ( left over )
Onion 1 sliced
Tomato 1 sliced
G.chilly 1-2
Curry leaves a few
Turmeric powder ¼ tsp
Garam masala ½ tsp
Oil 1-11/2 tbsp
Coriander leaves 2 tbsp ( garnish )
Eggs 2
Salt to taste
Method ;-
Cut the chapatis to thin stripes .( like noodles )
In a pan heat oil fry the onions ,with curry leaves & chilly.
Once it turns colour add the tomatoes ,allow it to get mushy.
Add turmeric, salt & garam masala powder ,give it a toss .( needs to be in low flame )
Add 2 tbsp water for the aroma to sweep it. Let it evaporate.
Now add the chapatis and toss gently.
Garnish with coriander leaves.
In a small kadai heat ghee /oil break in the eggs and fry it well.If preferred add a pinch of salt.
Now garnish it on top of the chapati and serve hot.
Note :- It will be a good idea to add a left over chicken or mutton curry with pieces while addind the powders. If chicken or mutton is added it would taste it taste like kotthu parota which is bought in a resturant.
